F\u00fcllung<\/strong><\/p>\n<ul>\n<li>1\/2 Hokkaidok\u00fcrbis<\/li>\n<li>Oliven\u00f6l<\/li>\n<li>1 TL Koriandersamen<\/li>\n<li>Abrieb einer Bio-Orange<\/li>\n<li>1\/2 getrocknete rote Chilischote<\/li>\n<li>Salz, Muskatnuss und Pfeffer<\/li>\n<li>2 Knoblauchzehen (Gesch\u00e4lt und in d\u00fcnne Scheiben geschnitten)<\/li>\n<li>800 g Spinat<\/li>\n<li>3 EL Butter<\/li>\n<li>3 EL Butterschmalz<\/li>\n<li>150 g kr\u00fcmeliger Ricotta<\/li>\n<li>50 g frisch geriebener Parmesan und etwas mehr zum Servieren\u2028ca.<\/li>\n<li>20 frische Salbeibl\u00e4tter (San Daniele oder Serranoschinken in der Pfanne gebraten und getrocknet)<\/li>\n<\/ul>\n<\/div><\/div><\/div><\/div><\/div><div class=\"vc_col-sm-9 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><div class=\"wpb_text_column\"><div class=\"wpb_wrapper\"><h4>So gehts:<\/h4>\n<ol>\n<li>Als erstes den Nudelteig zubereiten. Dazu das Mehl mit dem Salz vermischen, in eine Sch\u00fcssel geben und eine Mulde ins Mehl dr\u00fccken. Die Eier in die Mulde geben und mit einer Gabel dann die Eier verquirlen und immer Mehl vom Rand mitnehmen.<\/li>\n<li>Nach einer Zeit in die ge\u00f6lten H\u00e4nde nehmen und alles zu einem glatten Teig verkneten. In Frischhaltefolie verpacken und ca. 1\/2 Stunde ruhen lassen.<\/li>\n<li>Backofen auf 220 Grad vorheizen.<\/li>\n<li>Den K\u00fcrbis, halbieren und die Kerne entfernen. Dann in gr\u00f6\u00dfere St\u00fccke schneiden und mit Oliven\u00f6l einreiben. Den Koriander und die Chilischote im M\u00f6rser zersto\u00dfen, mit einer kr\u00e4ftigen Prise Salz , Pfeffer und Orangenabrieb mischen und die K\u00fcrbisst\u00fccke damit bestreuen und mit etwas Oliven\u00f6l begiessen.<\/li>\n<li>Alles in eine ofenfeste Form geben.<\/li>\n<li>Den K\u00fcrbis f\u00fcr ca. 30 Minuten bei 200\u00b0C im Ofen offen garen.<\/li>\n<li>Inzwischen in einem gro\u00dfen Topf Oliven\u00f6l erhitzen, Knoblauch dazugeben und im Topf 20 Sekunden anschwitzen lassen.<\/li>\n<li>Den Spinat hinzuf\u00fcgen und zusammenfallen lassen und dabei immer r\u00fchren. Drei EL Butter und Muskatnuss dazugeben und solange weitergaren, bis die Fl\u00fcssigkeit verdampft ist. Mit Salz und Pfeffer w\u00fcrzen und abk\u00fchlen lassen.<\/li>\n<li>Jetzt den Teig ausrollen. Dazu gibt es zwei M\u00f6glichkeiten: Entweder mit einer Nudelmaschine 4-5 Teigbl\u00e4tter von etwa 15 x 30 cm herstellen, dann anschlie\u00dfend mit etwas Wasser zu einem gro\u00dfen Rechteck zusammenkleben. Oder den Teig mit einem Nudelholz auswellen. Dazu den Teig mit Mehl best\u00e4uben und zu einem Rechteck ausrollen. Der Teig sollte so dick wie ein Bierdeckel und ungef\u00e4hr so gro\u00df wie ein K\u00fcchentuch sein. Den Teig auf ein sauberes K\u00fcchentuch geben und quer vor sich hinlegen.<\/li>\n<li>Auf der unteren L\u00e4ngskante den K\u00fcrbis in einer Reihe verteilen.<\/li>\n<li>Den Spinat auf dem Rest des Teigblattes geben, dabei 5 cm oben am Rand freilassen. Den Ricotta \u00fcber den Spinat br\u00f6ckeln und den Parmesan dar\u00fcberstreuen.<\/li>\n<li>Den oberen, freien Rand mit Wasser bestreichen und von unten beginnen, die Nudelrolle aufzuwickeln, genauso wie bei einer Biskuitrolle. Dazu einfach das K\u00fcchentuch anheben und es geht fast wie von selbst. Die fertige Nudelrolle fest in das K\u00fcchentuch wickeln und an beiden Enden mit K\u00fcchengarn zubinden. Dann beide Enden mit einer langen Schnur verbinden und so einen \u201cGriff\u201d f\u00fcr die Nudelrolle herstellen, um sie sp\u00e4ter bequem wieder aus dem Topf heben zu k\u00f6nnen.<\/li>\n<li>Einen weiten Topf oder einen Fischbr\u00e4ter mit kochendem Salzwasser f\u00fcllen. Die Rolle einlegen und mit einem Teller oder \u00e4hnlichem die Rolle beschweren und so unter die Wasseroberfl\u00e4che dr\u00fccken. Den Deckel auflegen und etwa 25 Minuten im k\u00f6chelnden Wasser gar ziehen lassen.<\/li>\n<li>3 EL Butterschmalz in einem kleinen Topf kr\u00e4ftig erhitzen, die Salbeibl\u00e4tter dazugeben und etwa 30 Sekunden braten, bis sie knusprig werden. Auf einem K\u00fcchenpapier abtropfen lassen.<\/li>\n<li>Die Pastarolle vorsichtig aus dem Topf heben. Vom Garn befreien, aus dem Tuch wickeln und aufschneiden \u2013 pro Portion rechnet man mit 2-3 Scheiben.
