In Deutschland\u00a0hingegen wird das als \u201eBauchlappen\u201c oder \u201eD\u00fcnnung\u201c bezeichnete Teilst\u00fcck\u00a0haupts\u00e4chlich zu Hackfleisch, Wurst oder Gulasch verarbeitet. Eigentlich eine kleine Schande. Der Cut ist genial, um <strong>w\u00fcrzig mariniert<\/strong> kurz auf dem Grill zu braten und in Streifen serviert zu werden. Ihr m\u00fcsst darauf achten, die <strong>Streifen quer zur Faser zu schneiden,<\/strong> damit sie saftig bleiben. Die Fleischstreifen machen sich super auf Sandwiches oder im Salat. Ihr k\u00f6nnt das Fleisch aus dem <strong>Rinderbauchlappen<\/strong> auch wunderbar kochen oder schmoren. Das verkannte St\u00fcck\u00a0ist bei uns relativ g\u00fcnstig. Steaks etwa\u00a02\u00a0bis 3 Minuten bei hoher Hitze angrillen, dann\u00a0in die indirekte Zone des Grillrostes legen\u00a0und bei etwa <strong>110-120 \u00b0C<\/strong> gar ziehen lassen. Flank Steak solltet ihr immer\u00a0<strong>medium<\/strong>\u00a0oder\u00a0<strong>medium-rare<\/strong>\u00a0grillen, dann wird es besonders zart. Nach dem Grillen <strong>noch 1\u00a0bis 2 Minuten ruhen lassen.<\/strong> Das ist\u00a0wichtig, damit der Fleischsaft sich wieder im Steak verteilen kann. Wenn ihr\u00a0es\u00a0sofort anschneidet, w\u00fcrde ein Gro\u00dfteil des Fleischsaftes sofort austreten.
