Urspr\u00fcnglich<strong> stammt es aus Laos<\/strong> &#8211; wird aber auch in der thail\u00e4ndischen Region Isan gerne gegessen. Nat\u00fcrlich erh\u00e4lt man Papayasalat auch im Rest von Thailand auf Streetfood-M\u00e4rkten, in Gark\u00fcchen und bei Stra\u00dfenh\u00e4ndlern. Wie kaum ein anderes Gericht vereint es perfekt die <strong>4 Geschmacksrichtungen<\/strong> und kombiniert <strong>saure Limetten<\/strong> mit <strong>s\u00fc\u00dfer Papaya und Palmzucker<\/strong>, <strong>scharfe Chili mit salziger Fischsauce.<\/strong> Verwendet werden f\u00fcr das beliebte Gericht ausschlie\u00dflich <strong>gr\u00fcne, unreife Papaya<\/strong>. F\u00fcr die Herstellung verwenden die Thais einen speziellen, riesigen <strong>Tonm\u00f6rser mit Holzst\u00f6\u00dfel.<\/strong> \u00dcbersetzt bedeutet <strong><em>Som<\/em> &#8222;sauer&#8220; und <em>Tam<\/em> &#8222;sto\u00dfen&#8220;<\/strong> &#8211; was sich auf diese Technik der Zubereitung bezieht. Wichtig bei der Herstellung ist es, die Zutaten immer wieder gut miteinander zu vermengen, so dass sich die verschiedenen Komponenten gleichm\u00e4\u00dfig miteinander verbinden. Die unreife Papaya bekommt man im Asialaden &#8211; ebenso wie die Schlangenbohnen. Wer diese Zutaten nicht auftreiben kann, kann aber auch mit m\u00f6glichst unreifen, harten Papaya aus dem Supermarkt und Prinzess- oder Brechbohnen arbeiten.<strong><br Es ist ganz wichtig, dass die Papaya noch gr\u00fcn und hart ist, mit einer essreifen Papaya funktioniert der Salat nicht! Wer keinen Julienneschneider hat, kann auch mit einem einfachen Sch\u00e4ler d\u00fcnne Scheiben absch\u00e4len und diese dann mit einem Messer fein schneiden.<\/li>\n<li><strong>Karotten sch\u00e4len<\/strong> und ebenfalls in ganz<strong> feine Streifen schneiden.<\/strong><\/li>\n<li>Die <strong>Schlangenbohnen<\/strong> waschen und die Enden abschneiden. In etwa fingerlange<strong> St\u00fccke schneiden<\/strong>. Wer keine Schlangenbohnen bekommt, kann auch gr\u00fcne Bohnen (Prinzess-, Brech-, Stangenbohnen) verwenden und in kochendem Wasser blanchieren. <strong>Achtung: rohe europ\u00e4ische Bohnen sind giftig<\/strong>! Daher die Bohnen auf alle F\u00e4lle mindestens 2 Minuten kochen, bis sie bissfest und knackig sind. Dann mit kalten Wasser abschrecken.<\/li>\n<li>Knoblauchzehen sch\u00e4len und grob hacken.<\/li>\n<li>Die Chili(s) entstielen und samt Kerngeh\u00e4use ebenfalls grob hacken.<\/li>\n<li><strong>Knoblauch und Chilis<\/strong> in einen <strong>M\u00f6rser geben und zerstampfen<\/strong>. In Thailand wird hierf\u00fcr ein sehr gro\u00dfer Thaim\u00f6rser aus Ton mit Holzst\u00f6\u00dfel verwendet &#8211; wer just so ein Ger\u00e4t nicht zur Hand hat, kann auch mit einem Granit- oder Marmorm\u00f6rser arbeiten und dann portionsweise alle Zutaten stampfen und in eine Sch\u00fcssel umf\u00fcllen.<\/li>\n<li><strong>Erdn\u00fcsse<\/strong> in den M\u00f6rser geben und<strong> andr\u00fccken.<br \/>\n<\/strong><\/li>\n<li><strong>Palmzucker, Fischsauce und geviertelte Limetten<\/strong> hinzuf\u00fcgen.<\/li>\n<li>Nun eine Handvoll <strong>Papayastreifen und Karotten<\/strong> hinzugeben und alles mit Bedacht stampfen.<\/li>\n<li>Jetzt die <strong>Bohnenst\u00fccke<\/strong> hinzugeben und vorsichtig<strong> weiter stampfen<\/strong>. Die Bohnen sollen nicht komplett musig sein, sondern nur leicht andr\u00fcckt werden.<\/li>\n<li>Mit der Hand <strong>alles gut durchmischen<\/strong>, damit sich alle Zutaten gut miteinander verbinden.<\/li>\n<li>Jetzt wieder eine <strong>Handvoll Papaya und Karotten<\/strong> hinzugeben,<strong> wieder mischen und stampfen. <\/strong>Solange wiederholen, bis alle Zutaten aufgebraucht sind.<strong><br \/>\n<\/strong><\/li>\n<li>Fehlt noch etwas? Mit Fischsauce, Zucker und Chili abschmecken.<\/li>\n<li>Zuguterletzt <strong>Cocktailtomaten vierteln und mit getrockneten Shrimps <\/strong>in den M\u00f6rser geben. <strong>Nochmals mischen.
